·55g/2oz butter

·1 onion (chopped)

·300g/10 ½ oz leek (finely

·Splash of white wine

·100g/ 4 oz potatoes (peeled
& sliced)

·290ml/10floz/1 ½ pint vegetable

·Salt & freshly ground pepper

·290ml/10floz/ ½ pint of milk

·2tbsp cream

·Handful of snipped chives

·Small handful parsley (chopped)


1. Melt the butter in a medium saucepan,
& the onion, leek & cook until softened.

2. Add the wine, potatoes, stock &
seasoning and until the potatoes are tender.

3. Liquidise using a blender, pass
through a sieve before adding the milk & cream.

4. Chill in the fridge until ready
to serve.

5. Sprinkle with chives &
parsley before serving.
